Okay, so I got tired of fried stuff and realized it’s been quite a while since I gave my oven some work to do. Now, what do I bake (stroking my imaginary beard, with that serious look on my face)? And the winner is……CHICKEN (sorry fish, we’ll get back to you soonest. Lol).

1.                  Chicken laps            –          1 kilo

2.                  Suya spice mix (I got a mallam at the local market to make this for me).

3.                  Vegetable oil            –          ½ cup

4.                  Soy sauce      –           ½ cup

5.                  Lemon juice  –           ¼ cup

6.                  Black pepper            -1 table spoon

7.                  Fresh garlic  –           1 tablespoon (chopped)

8.                  Fresh ginger            -1 tablespoon (chopped)  

9.                  Seasoning to taste


Wash chicken and pat dry.

Combine ingredients 3, 4, 5, 6, 7, 8 and 9 in a bowl, mix well and add the chicken pieces.

Make sure chicken is well covered in the marinade and cover bowl tightly.

Place bowl in fridge for at least, an hour.

Preheat your oven.

Remove chicken from marinade and bake under medium heat for 30 minutes (turn and baste chicken with marinade every 10 0r 15 minutes).

Combine 4 tablespoons of suya spice mix with 3 tablespoons of vegetable oil.

Baste chicken pieces with the suya spice mix and bake for another 15 minutes.

Serve and enjoy.
